It feels like a different kind of adventure, like when you just found out you have an entire library for yourself full of confidential books you aren't supposed to read. The gold beta was a godsend in this regard since before it all we had were tiny crumbs of data and low quality sketches here and there, and I can only hope that in the far far future, we get to see either a gen III beta, or all of gamefreak's archives full of designs that didn't make the cut, early concept art, all that kind of stuff. Dunno, maybe when gamefreak closes (if it ever happens), some intern can make all that shit public forever on the internet.
Regarding UBs, they're pretty cool and without a doubt the best "gimmick" to come out of gen VII, considering the other candidate are z-moves. They really pushed the boundaries of what a pokemon can look like in a good way, for once: they're fun to look at, and weird. I think guzzlord and naganadel could tone the spikes down a bit, but I love them all still.
