I'm under the distinct impression there's two kinds of breeders:
-The ones that breed and take care of a wide variety of Pokemon for use in contests, battles, or just breeding them to produce better Pokemon . I'd also expect them to be something of a kennel or stable hand for the people who either can't or won't use the PC system.
-The ones who're normal-ass ranchers and are raising Pokemon for their various animal products or labor: Dairy, Eggs, Wool, and in some rare cases Meat. From what I've seen the big 'farm' Pokemon are: Miltank, Gogoat & Skiddo, Tauros, Mareep & Flaffy, with the obligatory horses and work animals being Pokemon like Ponyta, Rapidash, Mudsdale & Mudbray, and dogs like Growlith, Snubble, and Herdier. They also have a lot of Psyduck, Raticate, Bidoof, and -super odd- Girafarig? Whats up with that?
Regardless of what they do, though, their lives are gonna be defined by feeding Pokemon, shoveling shit, cleaning & grooming Pokemon, collecting eggs, and making sure they don't kill one another when they fuck. With the actual rancher getting to do the more personal acts of sheering, milking, and butchering the odd unlucky fat Pokemon.
