Geeta might be a gigantic fucking jobber but she gets several appearances and plenty of buildup ahead of her Champion fight, and more importantly she runs the Pokémon League which is a very relevant organization in Paldea, she's basically the head of government. There's a whole separate aspect of her character with her being a ruthless bitch of a boss to half of the cast, she remains relevant throughout the postgame.
Diantha appears in one (1) cutscene early in the game where she says and does nothing of significance (actually I think she joins Sycamore talking about how interesting and definitely not obviously evil Lysandre is) and then disappears until the story is over and you fight her at the Pokémon League. Every other Champion in the series, Lance, Wallace, Iris, all of them play some bigger role and do SOMETHING to help you in the story, at least once. Diantha is the ONLY one who does jack shit, there's no contest here.
