If a move they have isn't in SnS, then use the closest analogy. Add a new stat, unless it's crazy high like CP or crazy low like LVL, just average existing stats and plop it in.
Pokémon games are NOT complex. Nor are they written in a dense, unreadable way. The reason they can have so many Pokémon is because they have a very simple base to build on. Many Pokémon games have dozens, sometimes hundreds of unused Pokémon slots for updates, or removed Pokémon, which could easily be used, and I doubt SnS will be an exception.
