The only real argument I see being thrown around is that they chose to move Blaziken's knee down so it's closer to human proportions to make the mechanics of its martial arts attacks move in a similar direction.
Kind of an aside, but it's worth noting that the actual structure of the leg and foot is obscured by long-ass feathers so we can't actually check what the real shape of it is. If you look at OP's image, you can see the back of the leg sticks out and ends in a spur.
