The biggest reason why they went for Incineroar is because of how fun the design is. He's meant to play out as a Heel completely and to be expressive compared to the Owl.
Hell, he was the very last one revealed, meaning they were planning all along to be their jab at those expecting more. Ridley, Rool, Simon were clearly characters that fans around the world wanted. Isabelle was also a character that they insinuated the fans wanted. It makes sense that Incineroar would be the last one to show up since not only does the game need a pokemon rep, but the way it is played out this time makes sense.
The only thing about all of this is how the reveals played out. They should have tried to keep a fan favorite for the last stream
