In pokemons case they're targeting young impressionable children, a demographic with little critical thinking and perspective of the quality of a type of media and genre, if any at all. If you as an adult find pokemon great entertainment, that's good for you, you are free to enjoy things. But it is bottom of the barrel entertainment and you're well past the age of the target demographic for said entertainment, just like Harry Potter isn't good writting, passable writting but not great.
But Pokemon isn't only targeting a young audience, it is also mediocre as it fails to live up to its potential time and time again even from a childs perspective. As kids you all wanted a living breathing open world when the technology was ready for it and when the 6th gen rolled in pokemon where still stuck in its 2d formula on a portable snes. In the current year other franchises have had living breathing worlds for a decade and more, still all we get on the switch is a larger safari zone.
If you have never experienced something better and don't have the brain capacity to visualize something better then you're going to think that the lowest common denominator entertainment is perfect.
