If you end up killing it too fast use a Fighting, 2 neutral mons and 1 ghost.
If you don't come close to killing it after getting your coins you can go 2 fighting, 2 neutral, a team of full ghosts or alternatively and heavily recommended use a "finisher" ability, like Final Effort, Swarm or the really recommended Last ditch effort, which has a multiplier of x5 damage even at skill level 1 so it deals a huge amount of damage on the last 4 turns.
As for the coin arrangement itself it requires some time to get the hang of it, but if you're on 3DS you should be able to get a match of 5 coins (530) frequently.
After you get accustomed with it you can, later down the road grind experience on the same stage too and vary your teams.

https://www.youtube.com/watch?v=vpSyhlYD4iIIf you're on mobile the cat is more likely to disrupt you with rocks if you have exceeded a threshold of damage so you would also need to consider that and settle for a more steady 300 coins per run very often depending on your setup.
In conclusion there are many setups to play cat so there isn't a "best team", also some of us like to grind exp concurrently to coins so we take whatever needs the exp and adjust the teams accordingly but I would recommend that once you feel comfortable with grinding the cat.
