LGPE was super cartoony, and they did a very good job of making that look good. One advantage of this style is you can use very simple textures - they don't need detail. Pic related.
With Gen8, they are trying pull of a more Breath of the Wild art style. It's sorta working (dat long grass) and sorta not (blurry ass textures). But then, BotW also had blurry ass textures that were sometimes cleverly hidden (and sometimes not).
