And I don't begrudge them at all for giving starters personalities. I think it makes sense. Think of pets in real life and how diverse their personalities are, even among different breeds of their species. Cats, dogs, birds, lizards, snakes, you name it, you probably know how they stereotypically act. You can watch shows on Animal Planet about different kinds of dogs and their typical temperaments and behaviors and everything, because it's what's typical of that species or breed.
If you really want to get nitpicky and headcanon-y about it, I'm sure there are even Pokemon that have a general disposition typical of their species, but also have outliers here and there because they're individuals who have experienced different things. But for the most part, we can still make general statements for animals like "Chihuahuas are loud and yappy and full of energy", and general statements for Pokemon like "Incineroar likes to act tough and brash on the outside, but has a secret soft side on the inside."
