If you’ve never touched Pokémon before, I honestly suggest you get a 3DS and play Pokémon Sun. To be clear, I am only recommending the original Sun and not the Ultra version.
I played Sun this past summer. It was the best overall Pokémon experience I’ve ever had. The level scaling is near perfect. Every major battle was challenging. The story was great. The music was hype from the start (speaking of which, use high quality headphones).
Alternatively, if you have a lot of time, play through the games in this order for best experience:
Red, Blue, or Yellow (3DS virtual console)
Gold, Silver, or Crystal (3DS virtual console)
Note: Crystal has a special event Pokémon hard coded into the VC version, so I recommend that one.
Black or White
Black 2 or White 2 (keep the same color. If you played White, play White 2)
X or Y
Omega Ruby or Alpha Sapphire
Sun or Moon
Brilliant Diamond or Shining Pearl
Let’s Go Pikachu or Eevee
Sword or Shield (buy the DLC)
