Even if they will never actually show off the mons the dex states are food but clearly can't be "harvested" like a giant crab or slowpoke who regenerate the parts used.
Like Barraskewda and Basculin may be directly stated to be food items; but i somehow doubt any of these food minigames will ever feature them.
