As you go through your adventures, they're giving you presents/items, snugging up to you, surprise hugs, taking a big hit and holding on with sheer willpower alone because of your bond. Then there's other things exclusive to certain pokemon such as your bond being a requirement to evolve or mega evolve. There's a lot of subtleties that say a lot about your relationship and that makes it easy to fall for pokemon, because its clear to both of you that there's lots love and friendship without neither of you having to say it.
