I get why Eggs exist, to hand-wave live births being talked about and probably to an extent the idea of fighting with newborns since a lot of real life animals born from eggs are already developed enough to live life after hatching. Yet, it's something I don't think they thought through very well, especially with early stuff from Gen 1, like Kangaskahn or literal Pokemon babies in the anime. Plus it makes the world feel way more fake. They were probably going for 'mystical monster' stuff but it doesn't come across that way at all.
I wonder if it's possible too that originally certain Pokemon were Eggs and others weren't (a ton of concepts and ideas were scrapped during crunch time of Gen 2 after all.) and it was either easier to just have them all hatch (and more fair between Pokemon) or they just didn't have time to program more into the breeding system. That's all guess work though so it's probably just Game Freak being Game Freak
