I think their defining traits for why older Pokémon fans don't like them are
>Region design is heavily simplified, rather artificial feeling, and takes away a lot of the natural progression feeling of older gens (compare Hoenn to Alola, Alola is a lot more cramped feeling, doesn't utilise water routes often DESPITE BEING AN ARCHIPELAGO and the routes themselves are more simplistic in layout)>shift away from the Japanese culture to more international flavour where Game Freak clearly has only outsider experience, means the regions feel much less authentic>side content has been stripped, gets much worse in Gen 8/9 but the Frontier is gone (can be blamed on Gen 5 as well, but considering OR/AS are remakes of Gen 3 it's inexcusable there), contests have disappeared from every game that isn't a remake where they were already there, no Mythical events and such that aren't just 'here's your Pokémon lol', no dungeons, so on and so forth>much more handholdy, disguised as 'convenience'. Any dungeons are gone, roadblocks are all event-based so you can just walk everywhere, perma Exp. All, boss battles are much easier with a few exceptions like Ultra Necrozma, you occasionally get free legendaries on a silver platter, get teleported everywhere in OR/AS instead of backtracking and naturally discovering side routes, constant reminders of where to go every 5 seconds
