With something like an open world you'd get to see pokemon in their natural habitats doing what they'd naturally do, like traveling in packs or interacting with other local species (mareanie attacking corsola for their coral, for example), and you'd be physically moving across the region instead of being funneled through it as you normally would be with the traditional route layouts. You could feel a truly free pokemon adventure. That itself could very well elevate the game by a lot.
If I was getting REALLY crazy I'd start suggesting have slice of life sort of shit along with that since that is truly the end game for Pokemon but I'm not going to set my sights that high.
