See, SM's Cel-shading was so bold and ugly and just used all over the place that simply removing it and boosting it to 1080p made those textures very nice. LGPE's textures added a really harsh lighting into the mix which resulted in very plasticy looking pokemon.
Gen 8 is meeting in the middle, toning the lighting down, while using very thin, which appears to be just a darker version of the color it's against rather than just black, cel-shading in specific spots.
You can see in pic how less harsh the lighting from looking at pikachu's ear tips and eyes, they look like a matte grey in LGPE while being a proper black in SS
