Stunfisk, Dhelmise, Dragalge, and Hisuian Qwilfish are some obvious ones, plus Dratini has technically been doing that from day one.
You also have mons like Inkay, Dreepy, Clobbopus, Pincurchin, or Eelektross, which while I don't think have any fishing encounters are pretty strongly implied to be at least semi-aquatic.
Obviously Water types are still the vast majority of water-dwelling mons, but it's not the only type down there.
