Probably Pikachu, in all honesty. I've used it on several playthroughs since it's available in every game, and it's always a lot of fun. Design isn't bad either, I love the little stripes on its back and the electric pouch cheeks are a nice touch.
Cosplay Pikachu from last gen was fun too, while it lasted. I loved Rockstar Pikachu.
