Yellow was my first game, and I loved it. If you don't look at it as anime related, you'll enjoy it more. It's better than Red or Blue because if you want all three starters they're all available. The gen two games are skippable imo, because of the lack of new Pokemon made available to you and the barren overworld. Everything feels squished together, and the areas from the first game are smaller and empty. The remakes were cool due to their gimmicks though. Emerald is definitely the way to go for gen 3, and Platinum for gen 4, no doubt. A lot of people complain about gen 5s plot but it's actually pretty cool, so I'd definitely not skip either of them. Both have a great selection of Pokemon and great difficulty level.
