Everyone's posting progress, so here's what I have thus far. Player starts out in the top map with the lab being the double doored building in the town below, going for a more medieval setting than usual. Using the Crystal disassembly, and the maps made using Polished Map++

It's possible, the palette currently used will have to cover both day and night since it shares the same colors as the bg_text.pal file, although I've heard Rangi and others mention how it should be possible to make one palette for both day and night (I guess by referring to the text palette of the current map rather than the bg_text file).
I still have the "red" channel currently unused, will see in the end if I'll use it for areas where land meets water, but so far I've managed somewhat.
