His story makes it seem like his standing up is unusual since he had to train himself to do it, but he's become the icon of the species, so all the game sprites/models have been influenced by him. Evolving into a quadruped also makes less sense if they're primarily bipedal. The first sprites sitting upright are probably in reference to its Maneki Neko origins.
