One thing I have noticed about Ash is that he is the most mature when he starts his newest adventure without being surrounded by older figures like his mom. For instance, early Kanto Ash was childish and inmature but as time went by he became more independent and starting with Advance Generation all the way to Diamond and pearl he behaves almost adult-like at least for a 10 year old. Then on the Best Wishes series he starts behaving like a little child again because he spent a considerable amount of time with his mom after returning from Sinnoh. Then In X & Y we see the most mature Ash yet because he didn´t spent that much with his mom and was also the oldest member of the group for the first time in the series so we see a wiser and older version of him...then, Sun and Moon happened and he behaves like a normal 10 year old boy again because he lives with two adult figures that can take care of him so he doesn´t need to act that older. At least that´s my theory.
