The specific episodes I can pinpoint easily are The Eevee brothers episode, vs Lt. Surge episode, and even the Bulbasaur's evolution ritual episode.
It is also implied several times that Pokemon are not the *same* Pokemon after they evolve. This is only ever really apparent when Charmander first evolves into Charmeleon.
