As you more Masuda Methods, you should see your average fluctuate closer to and around that. Not in any distinct way, as you'd have to do hundreds and thousands of MMs to see it properly average, and there's no guarantee it won't take over 1000 every time. That's just how statistics and probability works.
I've closing in on twice the "average" amount myself at the moment. But I've consistently hit under it the last few hunts. Back and forth. My average before this run was every 303 eggs or so. Even if my very next egg was the shiny, my current run would bump that up to 415. About one third of the eggs I've hatched for ALL my Gen 6 MMs have been taken up by this one run.
