Let's say you're 7 years old and have to choose between a grass spider, a water dolphin and a fire elephant. Of course, you have no idea of their evos because most 7 years old children can't look up spoilers on the internet.
You pick wichever one you like most and play with that, probably even overleveling it because you don't know about having a balanced team yet.
The point is, your starter could evolve into fucking Garbodor, totally not what you expected and wished for, and you'd still like it years later because of YOUR cool Lv. 74 Garbodor with Sludge Bomb, Take Down, Hyper Beam and Giga Impact that you used to steamroll the game with. One could argue is an ugly shitmon, but do kids care? No.
If you CAN know the starter evos before playing, than that's good, but most younger players after gen 1 games couldn't.
