With Digimon, your pet can devolve and digivolve back into a different digimon to get different data on them. You don't have to obtain a different digimon each time you want something within its branching tree. Digimon also recycle back to eggs once they get too old or die, so even if you can't devolve them they start over anew for you to raise in a different way.
In Tamagotchi you don't get anything beyond patting yourself on the back for raising every possible single species.
The focus of Tamagotchi and Digimon is caring for/training your pet and forming a bond with them, the fact you can get a different characters by how you raise them is what makes them appealing.
I think later Digimon games implemented pseudo pokedexes but Tamagotchi never did once, again because the focus is appreciating what you have rather than hording a mass of critters in which half or more you don't even care about. In all of the digital games you could only raise 1 Pokemon/Digimon/Tamagotchi at a time anyway.
