If you can get past the so random humor, this is a pretty succinct explanation of EVs, albeit wrong on how EVs increase stats; every 4 EVs equal an increase of 1 in the stat at level 100. Stat calculation divides the EV count by 4, then multiplies it by a ratio of level to 100; so, the difference between having 0 and 80 Attack EVs will be 20 at level 100, and maybe 19 at level 99.
IVs have a similar ratio; at level 100, having an IV of (X) in a certain stat basically just adds (X) to everything else in the calculation.
If you aren't doing competitive, it doesn't really matter much; maybe just keep the EVs of a certain Pokémon's Attack low if their Special Attack is much higher, and vice versa.
