I didn't bother touching EVs or IVs until I battled the League. I just grab whatever collection of shitmons I think look cool, and if I find a hurdle I can't beat I run away, catch something else and add it to my team to counter each specific boss as they come. Like I said, RR's huge amount of QoL stuff makes this super easy.
For Koga I vaugely remember he had a M-Toxitricity spamming Hyper Voice/Overdrive, so I grabbed a Palossand that neutralises both moves. For Blaine I think it was a Cloud Nine Altaria to get rid of the sun. Not sure what I grabbed for Claire, I think it was Mantine to stop the Dracovish fucking my shit up.
This was on the old version though, I don't know how much of the game has changed, afaik EV training is even easier now.
