If a gym leader has more Pokémon than your team you can add more Pokémon to match theirs, you never lose Pokémon if a gym leader has less than yours. When you add a Pokémon you can never change it, it stays on your team until the end. Pokémon evolve at the levels they usually do, if they evolve another way e.g. by a stone you can evolve them whenever you think would be a reasonable time. The levels your Pokémon follow are the same as your opponents (e.g. for brock you have a level 12 and level 14). Your Pokémon can only use their level up moves and at their respective levels. You can choose whatever gender your Pokémon are (unless they don't have a gender or are only 1 gender). For abilities you can choose what you want but I personally don't allow hidden abilities. I usually don't do held items unless I find a battle too hard. I put happiness to the max. I give my Pokémon a serious nature and no IVs or EVs unless I find a battle too hard then I give them a minor boost.
