2 is my favorite in the series, mostly because of the dungeon design and wide variety of traps/props and enemies with different behavior. It is an improvement over 1 in every aspect.
The one for the Wii is pretty good too. It uses a class system that makes combat more interesting, but it is not my favorite because it doesn't have the variety of enemies/props like 2 and the dungeon design is very boring. It is also much easier than 1 or 2.
If you are a Final Fantasy fan it also has nostalgia factor due to all dungeon soundtrack being remixes of FF music (including the NES games).
It got a port for the DS with extra features, but it doesn't have a full translation patch.
The one for the Switch (Everybuddy) is another "enhanced" port of the Wii game.
I haven't played it yet, but from looking at footage I saw some red flags, which is why I say "enhanced" with quotations.
It adds a "buddy" system which seems to be the main feature of the port (the original Wii game didn't have companions). It allows you to recruit some monsters/NPCs/FF Summons as companions for dungeons, but the Wii game was already pretty easy and I don't know if the Switch version was rebalanced to account for this extra help. Also, some of the buddies are paid DLC because of course they are.
The final boss fight was changed by removing the main gimmick that made it somewhat interesting. And one major story cutscene was completely ruined by censoring. I don't know if there are more changes like these.
So yeah, both Chocobo's Dungeon 2 (PSX) and Final Fantasy Fables: Chocobo's Dungeon (Wii) are worth checking.
Chocobo's Duneon fans have it worse than PMD ones. At least PMD got a full remake, while CD had no new games since 2007 and only got two ports of the last game.
