I'd recommend starting with Touhou 12.3. It's the fighting game with the largest roster, and it has characters from Touhou 6 to Touhou 10 in it. If you find a character that you like, you can look up what game they're from and go from there. Alternatively, you can start with 15.5, the newest fighting game which focuses mainly on characters from Touhou 12 - Touhou 15.
