If you want to see what the best of romhacks are and just need a GBA-style game, I honestly recommend Unbound. It has varying difficulties (from GameFreak to 'everyone is a Smogon tryhard'; the middle difficulties are where the fun lies). The story is decent for what it is, but the real gem is in the decomp that the devs developed for FireRed. It's amazing the work that's been put in, and seeing the wide dex complete with Megas is a treat.

Smoothbrains on this board will piss and moan about "muh competitive teams" but the thing is, if you don't enjoy the base Pokemon formula, you're not going to enjoy the formula with a challenge. But yes, when you have EVs, and the enemy doesn't, the game is easy. When you have IVs, and the enemy doesn't, the game is easy. When you have six pokemon, and the total number of trainers with six pokemon can be counted on one hand, the game is easy.
I would recommend Drayano for the DS games (more so for lack of choice, but only do the classic/legit versions of HGSS/BW/Plat, his headcanon edits are dogshit), Buffel Saft for XY and USUM, Dio Vento for LGPE and ORAS. Kobazco now has a SwSh difficulty hack as well which addresses the baby-tier difficulty but can't exactly solve the core problems. These all provide challenges which anyone who's played and enjoyed more difficult games will enjoy. The biggest complaint on this board is it being a slogfest, but this comes from people who get bothered by anything other than 'Press A on Super-effective'.
SV has a mod in development, to make it more challenging as well.
There is a romhack for Legends Arceus called Mythics Arceus; with how the Switch rom structure is with Atmosphere, you can delete all the fanedits and just leave the more difficult trainers. The problem is, PLA isn't a trainer battle game.
