The only game where she battles with an Ampharos is Masters, but the Ampharos in that game is specifically said to be different from the one that runs the lighthouse. It's being trained to replace that Ampharos. I have no idea why the Masters writers did that. The fact that she NEVER battles with Amphy makes me think it's not her starter and probably isn't even "her" pokemon officially.
What's more likely is that Ampharos is her "partner" in a more physical sense; with Jasmine having fallen in love with the pokemon after the first time it fucked open her cervix and unloaded an electrically charged pulse of sheep cum directly into her ovaries.
