They sense their trainer/partner/families emotions and they have a higher drive to want to keep them safe? Not to mention they only have that protective and loyal outlook when you've bonded closely with them, meaning they understand you not only on a personality level, but an emotional, psychological, and feeling level. This could make them more loyal to you just because of how close they are to you.
I think any Pokemon could have that type of bond with their trainer, like any starter pokemon who's grown close to their Trainer would die for them. Its just that a Gardevoir gets there a bit faster or in a different manner.
