Unova is especially guilty of this because it was in a transitionary period where designs were starting to change palettes a lot between stages, but shinies weren't yet handpicked so naturally they switch up a lot as well.
The Axew line is an especially inconsistent example (though both Fraxure and Haxorus have cool ones)
