Here's an idea:
Every day, we collaborate and create pokemon based on a country.

The best one is chosen as the pokedex entrant. It can be single staged or have evolutions, it doesn't matter. Best one wins. We stick it into a pokedex template and move on.
The next day we do the same for country 2, until we complete all 197. At the end we will have a fun country-based pokedex for shits and giggles.
Day 1 is Afghanistan.
