Mew, Clefairy, Eevee, etc are all cute and beloved but none of them has the distinct color and patterns that make Pikachu instantly recognizable in even the most minimalist of forms. Likewise pokemon like Poliwhirl, Charizard, Bulbasaur, etc lack the same level of cuteness that gives Pikachu merchandise such wide appeal. It had to be Pikachu.
