You gotta remember that the games are rigged in your favor, unfortunately for Ash he doesn't have that luxury.
When you catch a Pokemon it's usually a diamond in the rough and you have to teach it to refine its moves instead of relying on instinct alone which takes hours of daily practice. In the game the Pokemon you catch are already at full potential.
When a Pokemon learns a new move it usually can't use it right away but needs to repeatedly use it and fail before getting used to it.
You have to care for the needs of your Pokemon like for instance you need to clean out a Garbador's tubes every day or else they will get clogged and it's best to polish your rock and steel type Pokemon every morning.
Also finding Pokemon isn't just a matter of walking in the grass until the one you want pops up. You have to go deep into the wilderness and MAYBE you'll find a Pokemon and even if you do it will probably flee or beat the shit out of you before you even call out your Pokemon.
