To the OP: make sure to first set up a Synchronize farm. Catch a mon with Synchronize and mass breed it with a Ditto. They'll probably shove either Abra or Ralts somewhere in this game, so that shouldn't be hard. Then get yourself a Ditto with good IVs. We will have to see how easy it is to get high IV Pokémon in this game, but i have the feeling that the Wild Area will play a part in this.
EV training will also be something we have to wait and see how it works in gen 8. I hope we will get something like Pelago or Super Training. ST has my preference because Pelago is a bit too passive and the timegating sometimes makes it so that i forget that I still had Mons EV training in Pelago. you can also half cheat by getting a 6iv Ditto from an Anon, as I am sure there will be tons flying around after release, but at that point you might as well "Just injEct :^)" but that's just me
