The neat thing about theme remixes is that Game Freak remixes their own music sometimes so you can get an idea about the tone of something by listening to multiple versions of it.
Pallet Town's theme is super-simple, so there really isn't much you can do with it compared to the original... But a lot of music in the games are quite complex and you can probably work some pretty sweet magic with them.
In my opinion, Black and White 2 probably had some of the best Pokemon music in the main games, though it is not quite as well known as some of the other games.
You can probably tell by a lot of the responses in this thread that a lot of the music from those games is pretty highly regarded. This is one of my favorites:

An arranger called "Bespinben" has actually made sheet music for most of the music in the Pokemon Mystery Dungeon games, so it is easy to figure out where to start:
