Out of all of the grass types you're thinking of, I would go with Shiinotic. Some of its inspiration comes from fairy rings.
Other suggestions would be Sableye, Jumpluff, Klefki, Ninetales, Florges and maybe Hoopa if you're fine with using Mythicals. When I usually make themed teams, I like to look into Pokemon Egg groups, cause they can be as thematically relavent without having to potentially repeat the same type over and over.
