Not really a 'challenge' run but I've themed teams after certain trainer classes before
Like my Firebreather - Fire only (plus anything that learns smokescreen) in Emerald.

Kinda wanna try another now. Which game/class should I try?

Nah I find them pretty boring, building cool teams is my favourite part of the game any monotypes are too limiting.
I've done a few 'monotype-adjacent' teams though. Basically monotypes but with some thematic off-type Pokemon to spice it up. Makes it more balanced and aesthetic at the same time.

This is a Fire-Breather team that uses Fire types + anything that learns Smokescreen
You could also do a Dragon Tamer that is allowed things in the Dragon egg group (letting you use Charizard/Sceptile/Arbok/Scrafty)
A Flying trainer that uses the non-Flying type bird Pokemon (Blaziken/Decidueye/etc)
Water trainer with Dhelmise/Grapploctl or whatever

I just think it makes things a bit more interesting

This one was from an Emerald playthrough I did based on the 'Firebreather' trainer class. Only Fire types and Pokemon that can learn Smokescreen.
I think these kinds of themes make for a more interesting final team than a simple monotype, that tend to end up feeling kinda monotonous.

I did Firebreather once and just used Fire types + Pokemon that produce smoke (anything that can learn smokescreen basically), it gives some pretty aesthetic teams that I find more interesting than pure monotype

I've always just copy pasted the sprites into paint, it's not that hard.
I've been seeing a bunch more lately too though so idk if there's some generator out there for them
