The reason you can't get certain amiibos easily is because they drastically underproduce a certain amount of them. This gets people to want the rare ones. They start talking about it on social media, generating buzz. This buzz causes people to believe Amiibos are worth owning, that they are a commodity - and that way, even the shitty common Amiibos get sold easily as well.
Nintendo doesn't want you to own Greninja. It wants you to talk about wanting to own Greninja.
