Trust me when I say if it were that easy, we'd have mega evolutions in every game.
Basically, you'd have to change the index of the current Pokemon, update the various checksums and do recalculations, and then you'd probably run into 8 billion glitches. But if you got past that, you could have a battle script to work it out, but the difficulty then comes to item animations and such. I'll try to digging up research on Castform though, so thanks for the idea.
(What I know about Castform is that it only changes the type and sprite, so it's actually /not/ a true forme unlike the Unowns)
