The concept of a mechanically different mainline Pokemon experience interests me way more than shiny graphics. Especially if you're talking about Switch games which more often than not look like ass. I grew up playing SkiFree and Minesweeper so my standards for graphics are nearly non-existent. If the game feels good to play then nothing else really matters. The framerates are way more concerning than the resolution, antialiasing, or texture quality, but thankfully those can be worked out relatively easily. BotW ran like ass before it was patched, and I'm just not cynical enough to believe that Legends couldn't get the same treatment if necessary.
