some things to know:
this region is meant to be an actual challenge, which is why the levels are really high. more trainers, has a vs seeker like frlg, etc. and the exp share is a hold item like in gen 2-5.
the gym leaders pokemon with the blue backgrounds are given to you as gifts for beating the gym leaders. you get the unevolved forms of them.
the "champion" is kind of like steven stone, you encounter them throughout the game and later on they give you poipole. however, your rival is the real champion, like in kanto.
your rival has the starter thats strong against yours, uses the monkey thats strong against their own starter, and uses the gym leader gift pokemon thats weak against their own starter. so for example if you pick chespin, your rival will have charizard, simipour and abomasnow.
everything after alolan sandslash and before deino is a post game wild pokemon
