You catch a Pokemon because something about it stand out to you. Shininess, IVs, Natures are built into the game for that reason, they make a Pokemon unique and attrative. In the Pokemon world where Pokemon are abundant and you can easily find one by walking in the grass, the only worthwhile thing to do is catching yourself a prize, a strong common Pokemon, a shiny Pokemon, a rare 1-5% encounter Mon or legendaries.
Settling for a shitmon is the least immersive thing you can do in an animal catching game. People who settle for shit mons are freaks. IRL, people are picky with animals: familes adopt pets that stand out, farmers and hunters aims for the most useful and coolest animals.
So you being picky when catching is natural and immersive. If I'm going to have a Pidgeot in my team, you better believe I'm going to try catch a top percentage Pidgey. There's a gorillion of them out there, I'm not a real Pokemon master if I don't attempt to catch a good one.
Some Magikarps are better than others and worth your time more than others.
