Near each of the eight obvious gym buildings, there is an outdoor arena/battlefield. I suspect the gym leaders will be fought at these fields outside of their gyms.
The only exception to this is the gym in Glaseado, but there are mysteriously two gyms in Glaseado. We know from the trailer that the gym called Glaseado Gym, which Grusha is the leader of, is the one on the mountain, up the ski slope from the town.
Furthermore, I suspect the cave in the northwest corner of Mesagoza to be vivtory road and for the Elite Four to be the colosseum on the edge of the central crater.
