Africa could be a pretty neat one too. Zebstrika, Girafarig, Hippowdown, Donphan, Dodrio, Rhyhorn, Camerupt, Luxray, Lucario, Drapion, Krookodile, Bouffalant, Mandibuzz, Pyroar, Stantler, Sawsbuck, and Gogoat all make up the standard savannah animals you'd need. You could put Primeape, Ambipom, Slaking, the monkey trio, Darmanitan, Oranguru, and Passimian in the jungle. And with the early exploration stories of dinosaurs still living in Africa, a post-game deep jungle or swamp region to catch the majority of the pseudo legends, Tropius, Aggron, etc.
What would I want though? South America. Tepuis (tabletop mountains, pic related) are interesting enough in that some of them are so old and high up that we haven't found any fossils in them. Whatever you would find living on top of one of those could definitely make for an interesting Pokemon design, or even just the mandatory tower where you find the box legend.
